- 1 tablespoon rice vinegar
- 1 teaspoon sesame oil
- 1 teaspoon gochugaru (Korean red pepper flakes) – optional
- 1 teaspoon chopped scallions (for garnish)
Instructions
Step 1: Prepare the Batter
- In a large mixing bowl, combine the all-purpose flour, water, salt, black pepper, and gochugaru (if using). Whisk until the batter is smooth and free of lumps. The consistency should be similar to a thin pancake batter.
Step 2: Add the Fillings
- Gently fold in the chopped scallions, julienned carrots, and sliced onion (if using) into the batter. Ensure that the vegetables are evenly distributed throughout the batter.
Step 3: Heat the Pan
- Heat a non-stick skillet or frying pan over medium heat. Add 1 tablespoon of vegetable oil and allow it to heat until shimmering.
Step 4: Cook the Pancake
- Pour half of the batter mixture into the hot skillet, spreading it out evenly to form a round pancake about 1/4 inch thick. Cook for about 3-4 minutes, or until the bottom is golden brown and crispy.
- Carefully flip the pancake using a spatula and add another tablespoon of oil around the edges. Cook for an additional 3-4 minutes on the other side until golden brown and crispy.
Step 5: Repeat
- Remove the pancake from the skillet and place it on a paper towel-lined plate to absorb excess oil. Repeat the process with the remaining batter, adding more oil to the skillet as needed.
Step 6: Prepare the Dipping Sauce
- In a small bowl, whisk together the soy sauce, rice vinegar, sesame oil, and gochugaru (if using). Garnish with chopped scallions.
Step 7: Serve
